One-Pot Paleo Eggplant Dinner

When I come home from a long day of work the last thing I want to do is make a complicated meal.  Instead of reaching for that frozen pizza why not throw in a bunch of good for you stuff in one pot and call it good?  One-Pot Paleo Eggplant Dinner is no mess dinner that keeps it healthy and comes together in under 15 minutes.  Want to make it even faster? Chop up your veggies the night before.  Oh and when you’re deglazing that pan with wine…pour yourself a little glass.  You deserve it.

Prep your veggies. In a large saute pan over medium heat, heat oil and garlic.

Add onion and eggplant and cook for 5 minutes, stirring often until onions are translucent and eggplant is somewhat soft.

Add in fresh kale and let cook until kale wilts.

Add in tomatoes and seasoning. Add in a splash of red wine or stock and take a wooden spoon to get all the brown bits off the bottom of the pan.  Mix and let simmer for 7-10 minutes.

Add in fresh basil and taste to adjust spices as desired.

Serve over cauliflower rice.

One-Pot Paleo Eggplant Dinner

Ingredients

  • 1 Tbsp olive oil 
  • 2 garlic cloves minced
  • 1 onion diced
  • 1 medium-sized eggplant cubed
  • 3 cups kale (sub spinach)
  • 1 15 oz. can diced tomatoes or 1 1/2 cups of fresh cherry tomatoes
  • Splash of fruity red wine (sub any kind of stock for paleo) to deglaze the pan
  • 1 Tbsp Italian seasoning
  • 1/2 tsp garlic powder
  • 1/2 tsp kosher salt
  • 1/2 tsp pepper
  • 1/2 tsp red pepper flakes (omit if you don't want the spice)
  • 1 Tbsp fresh basil

Instructions

Notes

Add chicken to make it a more substantial meal!
