Easy Salsa Verde

Easy Salsa Verde is a staple in my refrigerator.  This recipe is authentic and is so easy.  It comes together in under 20 minutes.  Make a double batch and can it to have the glorious fresh flavors of tomatillos in the dead of winter.  It also makes a great gift to give to friends and family!  Fresh salsa anyone?!

Bring salted water in a large sauce pan to a rolling boil.  Remove husks from the tomatillos and rinse under warm water to remove the stickiness.

When the water is boiling add in the jalapenos, garlic, onion and tomatillos.  Boil 8-10 minutes or until the tomatillos turn an olive green color and the onion is soft.  Watch closely to make sure the tomatillos don’t burst, as you will lose all of the flavor!

Transfer the ingredients right from the water into a food processor and add the cilantro and salt.

Pulse until you reach your desired consistency.

Ingredients

  • 1 pound fresh tomatillos (about 12-16 tomatillos)
  • 3 fresh jalapeno peppers (more or less depending on how spicy you want the salsa)
  • 3 garlic cloves
  • 1 large onion halved
  • 1/2 cup fresh cilantro leaves
  • Kosher salt to taste
