Perfectly Cooked Asparagus

Do you ever have a million things going on in the kitchen that all have to magically be done at the same time?  I recently went to a cooking class at Whole Foods and the instructor showed me a fool proof way to make Perfectly Cooked Asparagus.   The best part is that the asparagus will never be overcooked or mushy.   All you do is boil water and poor over the trimmed asparagus.  The temperature of the asparagus marries perfectly with the temperature of the water.  The best part is that you can let them sit in the water for as long as you want without over cooking!   Then just before you are ready to eat, throw the spears in a saute pan or a grill pan with a little oil and season with salt and pepper.

Trim the ends of your asparagus removing the woody part.  Place the asparagus in a pan or dish (a loaf pan works the best).  Bring a pot of water to a boil and poor over the asparagus so all the spears are covered.  Allow asparagus to sit in the water until you are ready to eat.

They will never overcook!  Just before you are ready for dinner, heat up some oil in a saute pan or grill pan.  Finish the asparagus in the pan and hit it with a dash of salt and pepper.  Enjoy just as is or top with a sprinkling of feta cheese.

Ingredients

  • 1 pound of asparagus
  • 1 Tbsp olive oil
  • Salt and pepper
  • 1/4 cup feta cheese for topping (if desired)
