Clean Cashew Chicken

Who doesn’t love piling a plate full of Chinese food?  It’s SO easy to make healthy.  You will love my Clean Cashew Chicken which is also paleo friendly!  Make a double batch and meal prep for your lunches this week.  It it great as leftovers!

Start by prepping your veggies and your chicken.

In a skillet over medium-high heat, add a bit of olive oil and saute your chicken.  Season with salt and pepper.  Cook until no longer pink.  Remove chicken from the skillet and set aside.  Add a bit more olive oil and add in vegetables.  Saute until they are soft but still have a crunch to them, about 4-5 minutes.

Add in soy sauce, honey and hot sauce.  Stir until well combined.  Add in the cashews and chicken.

Serve over rice or cauliflower rice.  Sprinkle with cilantro and sesame seeds if desired.

Ingredients

  • 2 boneless skinless chicken breasts cut into inch pieces
  • 1/2 red pepper chopped
  • 1/2 green pepper chopped
  • 1/2 white onion chopped
  • 2 stalks of celery chopped
  • 2-3 scallions chopped (reserve the green parts for garnish)
  • 1 cup of carrots chopped
  • 1/2 cup raw unsalted cashews
  • For the sauce:
  • 1/4 cup soy sauce (or coconut aminos if paleo)
  • 2 Tbsp honey
  • 1 Tbsp sriracha (or tabasco if paleo)
  • Fresh cilantro for garnish
  • Sesame seeds for garnish

Instructions
