Caprese Skewers

This is an easy and elegant dish to serve as an appetizer before a party.  I had my girlfriends over to celebrate my 30th birthday for a cocktail hour and served my Caprese Skewers.  They are so pretty but more importantly taste amazing.  Just a few ingredients and a few minutes is all you need!  Here’s how you make them:

Start by cutting your tomatoes in half.  Take a wooden skewer and put on one half of the tomato followed by the mozzarella and then the other half of the tomato.  Repeat until all the mozzarella is gone.  Place in the fridge.  When you are ready to serve, chiffonade the basil and sprinkle over the skewers.  Finish it off with a drizzle of balsamic reduction.  My favorite is at Trader Joes:

Caprese Skewers

Ingredients

  • 1 package of cherry tomatoes halved
  • 1 container of fresh mozzarella (in approximately one inch size balls)
  • 1/4 cup fresh basil chiffonade
  • Drizzle of balsamic reduction (you can find this in the grocery store next to the balsamic vinegar)
