Vanilla Chia Seed Pudding

This Vanilla Chia Seed Pudding is a great way to start your morning or a sweet way to end your day.  It’s a guilt-free way to indulge with a fraction of the calories.  And it takes little effort to put together!

In a medium bowl, whisk the almond milk, yogurt, maple syrup, the vanilla and 1/8 teaspoon salt until just blended.

Whisk in the chia seeds and let stand 30 minutes. Cover and refrigerate overnight.

Spoon the pudding into 2 bowls or glasses and serve with an assortment of berries.

  • 1/2 cup vanilla-flavored unsweetened almond milk
  • 1/2 cup vanilla low-fat greek yogurt
  • 1 Tbsp pure maple syrup
  • 1/2 tsp vanilla extract
  • 1/8 tsp kosher salt
  • 2 Tbsp chia seeds
  • Strawberries, blackberries, raspberries and blueberries for serving
