Steak Fajita Bowl

I love making Steak Fajita Bowls because it can be made with any left over steak or chicken from the day before.  Make your rice, guacamole and pico from scratch if you’re feeling ambitious OR just use already prepared ingredients to throw this meal together in a snap.  Pair with my Mexican Cauli-Rice or Easy Peasy Guacamole.  Here’s how I make it:

Start by slicing your steak in thin strips and add the fajita seasoning and salt and pepper to taste.  Over medium high heat cook your steak to your liking.  Remove the steak from the skillet.  Over high heat add in a Tbsp  of oil and saute the peppers and onion for about 4 minutes so they still have a crunch to them.  (If you’re using left over steak, add in the steak to warm the last minute or so of the veggies cooking.)

 Prepare the rice according to package directions.  Now it’s time to assemble.  Start by scooping in the Mexican rice.  Top with steak, veggies, guacamole and pico de gallo.  Top with a sprinkle of fresh cilantro.

Ingredients

  • 4 oz skirt steak (leftovers work just as well!)
  • 1 tsp fajita seasoning
  • 1/4 red onion sliced in strips
  • 1/4 green pepper sliced in strips
  • 1/4 red pepper sliced in strips
  • 1 cup of mexican rice (try my mexi-cauli rice to make it paleo or whole30!)
  • 1/2 cup guacamole
  • 1/2 cup pico de gallo
  • Fresh cilantro to garnish
  • Salt and pepper to taste

Instructions
